Small Business Spotlight: Bistro 18 serves up something good in Pilsen

Pilsen is full of tasty restaurants with something for every palate. This month we chatted with Rafael Bautista from Bistro 18 about his passion for food and being an entrepreneur.
What are some of the opportunities and challenges of being a business owner?
The opportunities are your personal growth, success, and doing what you love to do for yourself. You get what you put into it. You meet people from all walks of life. Some will challenge you, others may inspire you. The challenge is mentally preparing yourself for this adventure and not getting discouraged when things don’t run as smoothly as you expect. Stay away from negativity. There will always be bumps in the road; it is how you go over them that will make you or break you.
Why did you select Pilsen as a place to set up your restaurant?
We selected Pilsen because it was a good opportunity for me to introduce a different type of restaurant that could belong to the community yet give a variety that is not common in the neighborhood. I integrated our Latin flair to a variety of dishes that makes each dish extraordinary.
What are three things people looking for a spot to eat should know about your restaurant?
First and above all, the quality of our meats, produce, and cafe. Our meats are high quality USDA premium meats that are grass fed, free-range, and from sustainable/humane farms. We are committed to freshness, quality, and homemade goods. Our cafe is our own blend, handcrafted, and organic. Our vendor is a local roaster with the absolute best quality coffee and passionate in their craft. We have the best burgers in town and our brunch will keep you coming back.
What makes your restaurant unique from other restaurants located in the area?
Besides our quaint decor and my personalized homemade dishes, I feature classic American, European, and Latin food to perfection.
What role did The Resurrection Project play in your new business and how were you impacted?
The Resurrections Project was a wonderful resource that we were fortunate to encounter. TRP is tightly knit with the community business owners, city / community leaders, and many other organizations. All come together to help get one started. TRP is there willing to lend you a hand promotes its community to the better economic growth and success.
What is your favorite dish off the menu and why?
My personal favorite dish is the Huevos Ahogados because of the uniqueness of the roasted pepita salsa and potatoes. It is the perfect brunch!
What would you say to people thinking about starting their own business?
Do it! Be unique and offer the best quality product possible. Do not cut corners. Look to your community for support and guidance. They are an important part of your community, growth and success. I wish them the very best.
